Magic Keto Cookies

Sometimes you just need a cookie, something sweet and chocolatey that doesn’t make you feel guilty.

These keto, low carb, gluten free cookies are the perfect guilt free treat.

Magic Keto Cookie Recipe

Ingredients:

2 tsp. Coconut oil, organic, virgin, unrefined

4 Tbsp Butter

2 Tbsp sugar, I used Lakanto monkfruit sweetener

2 Egg yolks

1/2 Cup Chocolate Chips

1/4 Cup Walnuts, chopped

1/2 Cup Coconut, organic, flake, unsweetened

Sea Salt flakes, optional

Instructions:

Preheat oven to 350 degrees.

Line a large baking sheet pan with parchment paper. (This will help absorb some of the melted coconut oil.)

Put the butter in a large bowl and microwave until soft. Remove from microwave and mix in the coconut oil, sweetener, and egg yolks.

Blend in the chocolate chips, coconut flakes and chopped walnuts.

Use a cookie scoop or spoon to place even amounts (about the size of a golf ball) onto the lined baking sheet pan.

Optional, lightly sprinkle sea salt flakes on top.

Bake 12 - 15 minutes until light golden brown. Some of the coconut oil will melt onto the baking sheet. (Don’t worry about this, when they cool, some of it will be reabsorbed into the cookie.)

Remove from the oven and transfer the cookies to a cooling rack. (You can speed up the cooling process by placing the cookies into the fridge.)

Once cool, the cookies are ready to eat.

If you are nut free, just omit the walnuts and increase the amount of chocolate chips and coconut flakes to 3/4 Cups each.
