Tater Tot Casserole
Happy New Year! We had a wonderful holiday season and hope you did too. There is nothing better that a house full of family on Christmas morning with everyone still in their pj’s and the smell of breakfast cooking in the kitchen.
We decided to give this popular Pinterest recipe a try; Tater Tot Casserole, and we’re so glad we did. It was easy to make and everyone loved it! Just put all of the ingredients in a casserole dish and bake.
Tater Tot Casserole Recipe
Aka “Hangover Casserole”
Ingredients:
1 - 16 oz. bag of frozen Ore-Ida Tater Tots
1 pound of cooked breakfast sausage, ham or bacon.
10 eggs
2 cups of shredded cheese
1 cup of milk or half and half
1 pepper, chopped
Salt and pepper
Directions:
Preheat the oven to 350 degrees F.
Grease a 9 x 13 inch baking dish. Put the Tater Tots in first, spreading them out in a single layer.
Top them with the cooked sausage and peppers.
Whisk the eggs, milk, salt and pepper together, then add the cheese.
Pour the egg and cheese mix into the casserole dish covering the Tater Tots, sausage and peppers.
Cover with foil and bake for 30 minutes. Remove the foil and bake 30 minutes more or until the cheese bubbles and starts to turn brown.
Remove from the oven and cut into squares.
Serve with fresh fruit, croissants (these are our favorite), coffee, orange juice or mimosas.

Notes:
Perfect for a holiday breakfast, brunch or to make on the weekend.
The cheesy, sausage, Tater Tot loaded mix is especially good after a night out. 👍😉
You can use any type of cheese you like; Cheddar, Colby, Monterey Jack, Mexican or whatever you have in the fridge.
Try it with sausage, bacon, ham or all three!
This can be assembled the night before and kept in the fridge, but don’t cook the casserole until morning.
