Easy Pumpkin Spice Cupcakes
It’s pumpkin spice season! If you love all things pumpkin spice, you will love these easy to make cupcakes.
All you need is 4 ingredients:
a box of spice cake mix
3 eggs
a can of 100% pure pumpkin, not pumpkin pie filling, just pumpkin.
1 Tablespoon of pumpkin pie spice
Directions:
Preheat your oven to 350 degrees
In a medium bowl, mix together the spice cake mix, eggs, pumpkin puree and pumpkin pie spice until well combined.
Grease muffin tins or use muffin liners. I like these non-stick silicon ones, you can find them on Amazon.
Bake in the oven 15 - 20 minutes or until a toothpick inserted comes out clean.
The cupcakes are delicious fresh out of the oven, warm, with just a little spread of butter. This is my favorite way to enjoy them, especially, in the morning with a cup of coffee or tea.
However, if you would like to enjoy these as a dessert, I highly recommend icing them.
Maple Cream Cheese Icing
Ingredients:
8 oz. bar of cream cheese
6 Tablespoons of butter
1 teaspoon of vanilla
3 Tablespoons of real maple syrup
2 Cups of powdered sugar
Directions:
In a medium bowl, cream together the cream cheese and butter until smooth. Add the vanilla, maple syrup and the powdered sugar 1 cup at a time, incorporating well. Add more powdered sugar, if needed, to reach desired consistency.
The cupcakes can be iced as soon as they are cool. Enjoy!
