Springtime Dessert - Key Lime Pie Cups
We’re kicking off spring with a refreshing dessert, Key Lime Pie Cups!
As soon the weather starts to warm up, I start craving everything citrus; lemons, limes, oranges and grapefruit. I love fresh squeezed orange juice with breakfast, half of a pink grapefruit with a sprinkle of sugar, lemon meringue and key lime pie.
We were invited to our friend’s house for a Bar-B-Q and needed something quick and easy to bring for the dessert. They were expecting 15 - 20 people so I wanted to make something that could be served without any fuss or extra dishes. Key lime cups seemed like the perfect choice.
I found this recipe on EntertainingwithBeth.com. She made hers in pretty paper cups but I didn’t plan far enough in advance to order those, so I used what I had in the pantry, plastic cocktail cups. They were the perfect size and disposable, no dishes to wash!
Key Lime Pie Cups
Serves 6-8
Ingredients:
7 graham crackers, crushed
6 egg yolks
1/3 C cornstarch
1/4 tsp salt
1 1/2 C water
3/4 C sugar
2 TB butter
2/3 C fresh lime juice (3-4 large limes)
Whipped topping, I used Ready Whip in the can.
Extra lime slices for garnish
Directions:
Place 2 Tb of the crushed graham cracker crumbs into each of your serving cups, set aside.
In a medium saucepan heat water with sugar until sugar dissolves.
Meanwhile, in a large heat safe bowl, add the egg yolks, cornstarch & salt. Using a whisk, mix together into a yellow paste.
Slowly add the hot sugar water to the egg mixture whisking the entire time.
Pour this mixture back into the sauce pan and cook on medium, stirring until the entire time until it starts to thicken. As soon as it resembles pudding, remove your pan from the heat and add the butter and lime juice. Stir until butter is melted and mixture is smooth.
Scoop the lime curd into the cups with the crushed graham cracker crumbs. Fill each one about 1/2 full.
Place into the fridge until cool. When ready to serve, swirl the whipped topping on the lime filling and add a slice of lime for garnish.
