Banana Bread

Recently, I was included in a Quarantine Cooking Recipe Exchange and it sparked this blog idea! If we are not on the front lines battling this terrible virus that is affecting so many of us, a lot of us are quarantined to our homes left with time to fill making memories with family and cherishing the time together. 

Many friends were sharing some of their favorite at home “easy” recipes and I wanted to share mine as well. This easy recipe is one of my favorites and no mixer is required! Besides, what's better during a quarantine than a delicious recipe the whole family will love!

Banana Bread Recipe

  • Prep time: 10 minutes

  • Cook time: 50 minutes

I will recommend that the best bananas for banana bread are those that are at least half browned and squishy. 

Ingredients you need:

  • 3 very ripe bananas, peeled

  • 1/3 cup melted butter

  • 1 teaspoon baking soda

  • Sprinkle of salt

  • 3/4 cup sugar 

  • 1 large egg, beat before add to bowl

  • 1 teaspoon vanilla extract

  • 1 1/2 cups of flour

  • Cinnamon

  • Baking Decorating Sugar, we love King Authur’s Sparkling Sugar

Before you start:

Preheat the oven to 350°F, and butter or use PAM cooking spray to grease your bread pan

Recipe:

1. In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Then stir in the melted butter with the smooth banana mixture.

2. Next, mix in the 1 teaspoon of baking soda and sprinkle of salt. After, stir in the ¾ cup of sugar, beaten egg, and 1 teaspoon of vanilla extract. Lastly, mix in the 1 and ½ cup of flour.

3. Pour the batter into your prepared loaf pan, then sprinkle a good amount of cinnamon and your decorating sugar on top.

4. Bake for 50 minutes at 350°F (or until your tester comes out clean from the center)

5. Take out of the oven and let cool in your bread pan for a few minutes. I know I should tell you to let it cool completely before serving, but I can never wait that long as that amazing smell takes over the kitchen. Slice and serve with a pad of butter to melt on top.
